Nutritionist Professor Donka Baikova shares a safe method for cleansing from nitrates. The salad will not lose its appearance and taste, and you will be sure that you are not harming your health, the specialist told Nova TV.
Professor Baykova says that the biggest mistake of the hosts is that after shopping, the vegetables remain in the plastic bags. They help convert nitrates into nitrites, which are even more dangerous.
When you buy lettuce for spring salad, be sure to tear off the top leaves and discard them. Dip the rest in a mixture of water and vinegar and leave it for half an hour.
This will wash away the nitrates on the vegetables. You can then cut it as usual.
If you need to prepare the salad immediately and you do not have half an hour to stand in water and vinegar, be sure to wash it thoroughly with cold water before cutting.
The peel of cucumbers, tomatoes, zucchini and radishes must be peeled, and peeled vegetables are washed with warm water. You can also blanch them by soaking them in warm water for about 2 minutes before cutting them for salad.
It is good to eat vegetables seasoned with lemon, which prevents nitrates from turning into nitrites.
Lettuce, spinach, beets, turnips, Chinese cabbage, fresh onions, broccoli, cauliflower, radishes and carrots have been shown to have the highest nitrate content.
Tomatoes, peppers, beans, potatoes and cucumbers are poorer in nitrates.
