If you want to use the marinade as a sauce for the meat, boil it for three minutes before serving. The meat and poultry are marinated for one to three hours.

Seafood is marinated for fifteen to thirty minutes. The more acid there is in the marinade - lemon juice, vinegar or yogurt - the less time the products are marinated.

The marinade penetrates to a depth of one centimeter, so do not expect that the thick pieces of meat will soak more. After marinating the products and removing them from the marinade, you need to rub them with a mixture of spices.

Make your own mixture by adding in different proportions rosemary, paprika, dill seeds, chopped garlic, crushed black and white peppercorns.

Rub the meat well with them so that they penetrate it, and roast it in whole pieces or string it on skewers. Choose skewers with a square cross section, because the products do not slide on them.

If you use wooden and bamboo skewers, wet them for fifteen minutes before using them so that they do not catch fire. Before stringing the meat, dry the wood well.

In order to roast the pieces of meat on the skewers well, do not string them too tightly next to each other, leave space so that they can be roasted evenly.

Too large pieces of meat and vegetables will not fall if you string them on two parallel skewers and bake them like this. You can spray them with a little fat before baking.
