Ingredients: 300 grams of young nettle leaves, 3 tomatoes, 1 bunch of parsley, dill and green onions, 3 eggs, pepper and salt to taste, mayonnaise.

Wash the nettle and scald it with hot water. Drain, dry and cut. Wash and chop the remaining greens as well. Cut the tomatoes into pieces. Boil the eggs and then cut them. Mix everything and salt, add pepper and mayonnaise and mix well.

Soup with nettles and mushrooms

Ingredients: 300 grams of mushrooms, 1 medium onion, 3 potatoes, 4 handfuls of young nettle, melted butter for frying, 1.5 liters of water, 1 raw egg, ground black pepper and salt to taste, cream, fresh dill.

Wash the mushrooms and cut them into slices. Peel an onion and chop finely. Fry mushrooms and onions in butter, add salt and pepper.

Peeled potatoes cut into cubes and put in a saucepan with boiling water. Add the fried mushrooms and onions and cook for 20 minutes.

Wash the nettle and scald it with hot water. Cut it and add to the boiling soup. Cook for another 15 minutes. Before removing the soup from the heat, add the beaten egg in a thin stream and stir.

When you pour the soup into a plate, add cream and sprinkle with dill. It is very appropriate to serve white bread croutons with the soup.

Potato meatballs with nettles

Ingredients: 1 kg of boiled potatoes, 500 grams of nettle leaves, 2 onions, 2 eggs, 4 tablespoons flour, breadcrumbs, fat, salt. For watering: butter or cream.

Finely chop the onion and fry it in the fat. Wash the nettles and scald them with hot water and keep them for 5 minutes in a closed container. Squeeze the nettle and cut it.

Mash the boiled potatoes and add to them the beaten eggs, onion, nettle, flour and salt to taste. From the mixture, form meatballs, roll them well in breadcrumbs and fry in hot fat. Serve, drizzled with butter or cream.

Pie with cottage cheese, ham and nettle

Ingredients: 1, 5 cups flour, 125 grams packet of butter, 300 grams of cottage cheese, 1 handful of nettle leaves, 100 grams of ham, 2 eggs, 100 grams of grated cheese, oil, salt.

Cut the butter into the flour until it becomes a crumb dough. Cut the nettle, scald it with hot water and mix it with the curd.

Add the finely chopped ham and eggs. Mix everything. Spread half of the dough on the bottom of a greased pan or pie tin.

Spread half of the grated yellow cheese and on top - the nettle mixture. Sprinkle with the other half of the cheese and cover with the remaining dough. Bake in a preheated oven for 1 hour on medium heat.
