After several unsuccessful attempts, Russell discovered that the use of rye bread mold helped to create specific blue veins. On the other hand, the Frenchman sees that piercing the curd with a needle aids aeration and the mold promotes its growth. Subsequently, the discovery and technique for the production of Blue d'Avern are distributed throughout the region.

Nowadays, cheese is made by complex mechanical processes. It reaches the age of about four weeks, being stored in damp and cold cellars.
