Bulgaria is a country rich in different types of mushrooms. Unfortunately, however, only a percentage of the mushrooms harvested in our country are sold on the domestic market. Emblematic culinary treasures such as mushrooms and crow's feet are exported mainly to other European countries, and the native consumer cannot even dream of fresh spruce, as the harvest is offered only abroad.
This delicious mushroom is among the favorite delicacies in the Netherlands, Germany, France, Switzerland and others according to data provided by the Association of Processors of Wild Mushrooms and Fruits.
According to the director of the same association - Eng. Julian Kolev, native mushrooms are used in Bulgarian cuisine mostly in canned and dried condition. According to him, the fresh harvest is not highly valued in the country and is therefore aimed mainly at foreign markets.
Eng. Kolev shared that at the moment the future campaign for buying mushrooms is in question. He explained that, as a rule, it starts on June 1, but in 2015, due to the dry weather and low temperatures in the mountains, the yield amounted to 0 percent.
It is expected that this year the mushrooms will appear in June. Last year in May the harvest was excellent, but this happens once every ten years, said the director of the Association of Processors of Wild Mushrooms and Fruits.
Eng. Kolev also announced that there is already a harvest of crow's feet, and the mushroom is bought at a price of about ten levs per kilogram. He explained that the purchase price depends on our competitors in the foreign market, namely Serbia, Macedonia and Romania.
If they export for 6 euros, we cannot set higher prices, Eng. Kolev is categorical.
The expert also said that the industry has sent a letter to the Ministry of Social Affairs, requesting the right to conclude contracts for temporary workers. The reason is that, as with cherry processors, the work is seasonal.

During the festive December, the percentage of Bulgarian tomatoes was even lower - only 11%, said the expert, adding that most of the fruits and vegetables in our markets are imported.

Only 10 Percent Of Bread Is Made To Standard
The Branch Chamber of Industrial Bakers and Confectioners in Bulgaria announced that only 10 percent of the companies in our country prepare bread according to the approved standard Bulgaria. There are a total of 650 companies that prepare bread offered on the Bulgarian markets, 50 of which are designated as leading producers in Bulgaria.
65 Percent Of Our Food Is Imported From Abroad
The food that Bulgarians buy and consume is 65 percent foreign production. The forecasts are that next year the Bulgarian products on the market will be only 20 percent. According to Dimitar Zorov - chairman of the Association of Dairy Producers in Bulgaria, domestic production is about to be completely destroyed.
