According to some historians, Bulgarian yogurt originates from the lactic acid drink "koumiss", which the proto-Bulgarians prepared from milked mare's milk. Other historians believe that we owe its discovery to the Thracians, who noticed that sour milk lasted much longer than fresh milk.
When choosing milk from the commercial network, it is important to know that by law yogurt is produced from only two ingredients: milk that complies with the regulations of Bulgarian and European legislation and sourdough. It is inadmissible to use other ingredients, incl. milk powder, starch, preservatives, etc.
It is among the products that have not only the greatest nutritional value, but also the greatest benefits for human health. Yogurt, which in the past was produced mainly only in the Balkans, is now produced worldwide and is available in all shapes and tastes.
Before you reach for one of the dozens of types of milk that are available in stores in our country, you should keep in mind that the seemingly useful yogurt can become a calorie trap if you do not pay attention to what you buy.
Tip №1 - Choose the most common
As we have already said, for the preparation of yoghurt you only need fresh cow's milk and sourdough, ie. two species of live bacteria Lactobacillus bulgaricus and streptococcus thermophilus., which are in a symbiotic relationship. These microorganisms are responsible for the conversion of milk into yogurt, as well as its beneficial properties.
If desired, you can then add sugar, honey, dried or fresh fruit. Don't buy yogurts that have a lot of additives. Avoid milks that are labeled as containing artificial sweeteners or hydrogenated fats.
Tip№ 2 - Pay attention to the calcium content
Pay attention to the calcium content. Yes, all yogurts contain calcium, which is essential for bone health, but not all have the same content. Choose yogurt that contains at least 15 percent of the daily recommended dose of calcium, which is 1000 mg for an adult.
