The word adjika simply means salt. It is used to make a product called pepper-jika, which means salt with hot red peppers. There are many varieties of adjika, but it is basically the same - salt, red hot peppers, garlic.
Depending on what it contains, it can be red, brown, green, orange and everything is determined by the composition of the spices used for its preparation.
Red and orange adjika are used to grind nuts, such as walnuts or peanuts, until a walnut dough is obtained. It is used to decorate or season meats, poultry, vegetables, eggs. The classic adjika is red and hot because it contains hot red peppers, garlic, walnuts, salt and spices.
Here is a recipe for meraklii: 500 g of fresh hot peppers, 6 cloves of garlic, coriander seeds, dill, basil, savory of 10 g, 50 g of walnuts and salt to taste. First, clean the hot peppers from the seeds, pour warm water over them and press them on top with weight, leaving them for 3-4 hours in a cool place. Then they are drained from the water and together with the other spices in a stone hammer they are ground into a pulp, which has a very pleasant aroma.
Nowadays, you can grind with a meat grinder, but this will change the taste and affect the taste of adjika. Grate the garlic cloves as well as the walnuts. Mix everything and mix well.
They improve the taste and help to store it for a longer time. When ready, the classic adjika is poured into glass jars and closed with a lid. Store in a dark and cool place!
