The little-known South Asian country of Nepal is located between India and China and is famous for both its unforgettable natural views and its poor population, often living on the brink of misery.

Aromatic coconut shrimp
Necessary products: 200 g boiled or blanched shrimp, 2 tbsp. olive oil, 1 clove garlic, 100 ml sour cream, 60 g rice flour, 25 g wheat flour, 25 g starch, 1 egg yolk, a handful of cashews, a handful of coconut shavings, 1/2 tsp lemon peel, 1/2 tsp lemongrass, salt and fresh ginger to taste, a little coconut milk and a little plain yoghurt
Method of preparation: Fry the shrimps in olive oil and add the mashed peeled garlic clove, finely chopped ginger and mashed lemon grass. Leave for a few minutes to release the aroma and add the starch and both types of flour, which are diluted in coconut and yogurt. If necessary, add a little water. Once the dish is ready, season with salt and garnish with cashews and coconut shavings.
A traditional Nepalese dish made from Dahl legumes
Necessary products: 80 g white large beans, 80 g small ripe beans, 80 g brown lentils, 80 g red lentils, 80 g chickpeas, 5 cloves garlic, 1 large onion, 3 tomatoes, 3 tablespoons oil, salt and turmeric to taste, finely chopped or grated ginger.
Method of preparation: All legumes are soaked in water from the previous evening, then boiled well. Be sure to discard the first 2 waters. While waiting for them to cook, it is good to fry the finely chopped garlic cloves and ginger in oil.
Finely chopped onions and tomatoes are added to them. When all the products have softened, add the prepared legumes and let the dish simmer for a while until all the aromas are absorbed. Finally, season with salt and add turmeric.
