Stilton cheese has been the first friend of the English since the 17th century, when it was first sold in the village of Stilton. In the period of the 19th - 20th century it was considered that the cheese bears the name of the village because it was produced there, but this myth is today debunked.
The first recipe for Stilton cheese was given by Richard Bradley in 1723, but there are no details about it. Back then, the cheese probably looked like a hard cream cheese, pressed and boiled in whey. And very quickly, as early as 1724, it was declared a symbol of English cheeses by Daniel Defoe.
With years of mystery, all that remained was speculation about the content of this amazing dairy product, the taste qualities directed everyone to the presence of whole milk and the addition of cream cheese.
Thanks to the exciting story surrounding the creation of Stilton, the city gained immense popularity, deservedly or not.
The taste and popularity of the cheese make it such an expensive product that in neighboring regions they are beginning to imitate its composition. An interesting fact is that 136 liters of milk are needed to make only 8 kg of cheese.
The thing that distinguishes it from other cheeses is the fact that it has a slightly sharper and saltier taste. There are only 6 dairies in the world licensed to produce Blue Stilton, and only three counties in England are allowed to produce the brand.
Nevertheless, nearly 1 million cheeses reach the markets annually. White Stilton, on the other hand, is also a protective product that does not add mold spores to keep its white color.
Blue Stilton has a very flexible texture, which makes it easy to use in cooking. Bread, sweet wines, salads, soups and sauces can be made with the addition of this cheese.
It can also be frozen, retaining its taste. So you can store it for at least 3 months, but it should be eaten within a week after thawing without putting it in the freezer again.
