Unknown and interesting practices for food preparation and processing will be presented at the scientific conference so that they have a positive impact on health.

Local culinary traditions will point to a modern method with which we can eat healthily with ease.

Grilled meat is one of the most typical things for the native cuisine, as the most popular are the Bulgarian meatballs and kebabs.

According to one legend, however, the first kebabs were made in a pub in Bucharest. It is said that while making sausages, the skin was finished and the master decided to make sausages with the same cylindrical shape and so the kebabs were made.

Some directories say that between 300 and 400 types of meatballs are prepared in Bulgaria, which makes us one of the few nations with such a culinary diversity.

In terms of ingenuity, we are surpassed only by the Serbs, whose traditional menu is 70% based on the grill.

In Turkey, more than 80 types of meatballs are prepared, and the meat in them must be minced and pork. In the area between Edirne, Istanbul and Izmir, one can eat juicy lamb meatballs, garnished with hot peppers, chopped onions and a roasted slice of tomato. Meatballs in Turkey are always served with bread.

In Greece, the most classic recipe is keftedes. What the other Balkan nations have in common is that the Greeks made these meatballs from coarsely ground pork and beef, to which they added chopped onions, paprika, breadcrumbs, eggs and parsley.
