What makes Caesar salad different?
It is simple, elegant, cheap and famous. These are some of its most remarkable qualities, but what really draws us to this recipe is its authentic and inspiring history.
Many thought so Caesar salad is so named after the great Roman general because it was one of his favorite dishes. But nothing like that.
Most likely, however, the original recipe was created by Caesar Cardini in 1924. By name, it can be assumed that the first Caesar salad was served in Italy, but this is not the case.
Caesar Cardini is an Italian originally living in San Diego and owned a restaurant in Tijuana, Mexico. Thus, the first original Caesar salad was served for the first time on July 4, 1924 in Mexico.
According to the story of Caesar Cardini's daughter, the restaurant was full that day and the kitchen was almost empty of products. So Caesar Cardini decided to serve a dish of the other ingredients available in the kitchen and to add some drama to the situation, he decided to assemble the salad in front of the customer.
He created the salad from products he had on hand: leftovers from previous days - lettuce, eggs, Italian cheese, some lemons and dry bread. He mixed all these ingredients and placed them in a bowl, to which he later added a sauce he prepared quickly, inspired by an old family recipe with which his mother raised him as a child in times of need in Italy.
After solving the problems with the dishes, Caesar served the salad to his guests, making them believe that they were tasting the star dish of the restaurant - and they believed! The guests were enchanted with this delicious recipe, so much so that it became a success from that day. From that moment the dish gained fame in the restaurant, as well as in the western part of the city, where restaurants soon began to copy it.
The secret of the success of this dish was due to its dressing - its sauce. So in 1938, Cardini moved to Los Angeles and began bottling the dressing, until he finally patented it and put it on the market through his company, Cardini Foods in Culver.
The other version shows that it was a lady named Beatrice Santini who invented this salad in Austria in 1918. Santini and Cardini never met, the connection between them is the son of Beatrice Livio, who emigrated to Tijuana and found work in the restaurant of Mr. Cardini. One day, a customer burst into the restaurant's kitchen just as Livio was eating a salad his mother, Mrs. Santini, had taught him to make. He asked if he could try some of that. The client liked him so much that a week later Caesar salad it was already on the restaurant's menu.
Initially, the salad was entirely vegetarian, but later there are many options, generated and tailored to the tastes and preferences of different customers.
The classic Caesar salad was made from Romanesco lettuce leaves, served with a whole egg boiled for a minute in hot water, finely chopped garlic, old bread croutons toasted in a pan with garlic and oil, a few drops of Worcestershire sauce and lemon juice. It was all sprinkled with grated Parmesan cheese.
Today, many restaurateurs have included in their menu Caesar salad with many variations, with the addition of grilled chicken breasts, shrimp, red fish, anchovies, lobster, mushrooms.
