They are most often made with plain flour, but if you want them to become crispier, it is good to add rice flour. Their stuffing can also be sweet or salty, meat or vegetable or even legumes. It all depends on your preferences. Here's how you can make them at home:

For the traditional recipe for making samosa dough you will need only 400 g of flour, about 180-200 ml of water, 1 teaspoon of salt and 6 tablespoons of oil or olive oil. It is important to sift the flour 2 or even 3 times. Pour it into a large glass bowl and mix it with the salt. In the middle of it you make a well in which you pour the oil or olive oil and gradually add water, stirring constantly by hand.

If necessary, add more water, because there is no way to judge exactly what flour you bought. Knead the dough by hand for a few minutes and when you think it is soft and smooth enough, cover it with a damp cloth and leave it warm for about 1. 30-2 hours.

While you are waiting for the dough to swell, it is good to decide what kind of filling you want the samosas to be. If you want them to be stuffed with meat, you can fry a little minced meat with finely chopped onions and spices of your choice. However, if you want to eat real Indian samosas, focus on vegetable fillings, or if you want meat, let it be chicken or turkey. The favorite spices of the Indians are the spicy ones, among which are curry, turmeric, cumin, coriander and others.

Whether you choose vegetable or meat stuffing, you can safely add finely chopped hot peppers or garlic.

When the samosas dough is ready, take it out of the bowl and roll it out on a thin baking sheet on a floured surface. Start cutting circles out of it using a special shape or cup (about 15 cm in diameter) to cut in half to make semicircles.

In this way, form funnels by sticking the bottom with a little water so that the filling does not run out. Fill them with the filling of your choice and close them well again with a little water. Then you can either bake them in the oven or fry them.
