Rasgulla dessert comes from the East Indies, but that does not stop you from preparing it at home and enjoying a culinary journey in new and unusual flavors.

Ingredients:

8 and 1/2 tsp. Full-fat milk

2 to 3 tbsp. lemon juice

5 tbsp. flour

2 tsp sugar

4 tsp water

2 to 3 tbsp. rose water (or a few strands of saffron)

Method of preparation:

Prepare the ingredients. Put the milk on the stove at medium temperature. Stir it periodically so that it does not burn. When it boils, add the lemon juice and mix well. Cook until the curd separates from the milk, and set aside for ten minutes. Squeeze well through cheesecloth and wash it well under running water. This will remove the lemon juice.

Put the product back in cheesecloth and leave for about an hour to drain. Then transfer to a bowl and stir. Continue until it becomes absolutely smooth. Then sprinkle the flour on top and mix again.

When ready, mix the sugar and water in a large saucepan and place them on the hob. While the sugar syrup is boiling, make smooth balls of dough and carefully add them.

The best option is to cook them in a pressure cooker. In this case, after adding the balls, put the lid on. After the first "whistle" cook for another 10 minutes.

Leave Go for a walk cool completely before touching them. They will have expanded to almost twice their original size and will be delicate to the touch while hot.

When cool, pour rose water or saffron syrup (made by soaking the saffron threads in a little warm water) on Rasgula. Refrigerate for a few hours before serving.
