For twelve muffins you will need two apples, 250 grams of flour, one hundred grams of brown sugar, two teaspoons of baking powder, one teaspoon of baking soda, half a teaspoon of salt, half a cup of yogurt, sixty milliliters of oil, two vanilla powders, two eggs.

You also need sixty grams of chopped walnuts, a tablespoon of white sugar, a teaspoon of cinnamon. To make the dough soft, you need to carefully mix the wet and dry ingredients.

Preheat the oven to two hundred degrees. Grease a standard muffin tin or twelve special tins. Peel the apples, remove the core and cut them into cubes.

Mix the flour, brown sugar, baking powder, baking soda and salt. In a separate bowl, mix the yogurt, egg, vanilla and oil. Mix the milk mixture with the flour. Add apples and walnuts, you can optionally add pieces of chocolate.

Pour into molds. Mix white sugar and cinnamon in a bowl and sprinkle the muffins with this mixture. Bake for twenty-five minutes, until a toothpick stuck in the middle of the muffin comes out dry.

Remove the muffins from the tins and serve warm. You can also cool them on a wire rack and then, when serving, reheat them slightly.

If you do not currently have yogurt, mix two hundred and twenty milliliters of milk with a tablespoon of vinegar or lemon juice. Mix and leave for five minutes, then use.

When you fill the muffin tins with dough, fill them two-thirds or three-quarters of their height as the muffins rise. If you do not use all the holes in the standard muffin tin, fill the blanks with water so as not to distort the tin.

Use the muffin batter immediately, otherwise they will not rise. Once baked, remove them from the tins, otherwise the bottom will be damp.
