If you anticipate that you may find yourself in a similar situation and you will not have any time to cool down, you can preventively keep an envelope with grapes in the freezer. You just put a few in the glass when you pour the wine, and they change its temperature, but without diluting it and damaging its taste (like ice does).
Remember that the divine drink is consumed slightly chilled, not ice cold, so without unnecessary worries - by the time you accommodate the guests and tell each other a few stories, you will have the opportunity to serve them full glasses.
