Method of preparation: The peppers are cleaned of seeds, and the dish is best made from the so-called rural pepper. Then cut into strips and fry in fat. Once softened, add the grated tomatoes. Reduce heat and simmer until the liquid has evaporated. Beat the eggs on top, season with salt and pepper and stir lightly until the dish thickens. It can be served both hot and cold.
Roasted peppers with yogurt, eggs and cheese
Necessary products: 1 jar of roasted and peeled peppers, 500 g of shredded cheese, 1 cup of yogurt, 3 eggs, 1 tbsp flour, 1 clove crushed garlic, a few sprigs of fresh parsley, salt and pepper to taste.
Method of preparation: Cut the peppers and mix with the crushed cheese, 1 of the eggs, black pepper, finely chopped parsley, garlic and, if necessary, salt. Mix everything well and pour into a greased pan, which is put to bake for about 15 minutes in a preheated oven. Beat the remaining eggs together with the flour and yoghurt and pour over the dish. Bake until a crust forms on the surface of the pan.
