Pickles are a favorite of both young and old, especially when home-cooked. Although this activity is simple, there are still many households that cannot cook pickles to their liking. That's why we will now give you some secrets on how to make this happen:
- Choose the size of pickles according to what and for what kind of canning you will use them. Usually for saltier pickles, which are prepared in combination with sauerkraut and carrots, larger cucumbers are used, and for jars that are filled only with cucumbers, it is good to choose smaller vegetables. Another option is to sort the cucumbers by size after you buy them. So you will have jars with small cucumbers, which you are happy to eat directly, and jars with larger cucumbers, suitable for salads;
- After you buy the cucumbers you need to soak them in cold water for several hours. It is best to use a trough for this purpose. During this time you can wash the jars in which you will preserve them or the cans, if you make a mixed pickle;
- The next step is to wash the cucumbers and prepare all the necessary products and spices that you will need. It is mandatory to add salt and vinegar to taste. Dill, sugar, mustard seeds and black peppercorns are also added to most home-canned cucumbers;
- To give a richer taste to cucumbers, add garlic cloves, and for color and aroma - chopped onions and carrots;
- If you want the cucumbers to become more spicy, you can add a hot pepper to each jar in addition to the listed products. There are also quite a few recipes for pickles in which horseradish is added;
- No matter what products and spices you choose to put on your pickles, the cooking time is essential for their taste and texture. To make them crispier, you need to cook them for exactly 4 minutes, counting the time from boiling. This means that you need to stand by the fire or stove and watch the time on the clock. After 4 minutes the fire is extinguished (the stove is turned off), the jars begin to cool slowly by gradually pouring cold water into the vessel in which they are placed to boil. When the water has cooled enough, start removing the jars and place them with the cap down;
- If you want your cucumbers to be softer, you can follow the above steps, but extend the cooking time;
- If you have followed everything written so far, you can immediately start consuming your delicious pickles.
