Purslane is an extremely useful and valuable plant, although in Bulgaria it is a bit forgotten. It turns out that it contains more vitamin C than most citrus fruits.

The plant has succulent leaves and is recommended to be consumed fresh.

Purslane, also known as fat, can help with many health problems. It is said to help improve vision and can regulate blood sugar levels. If you do not know how to prepare it, we offer you several recipes in which you can use it.

The first recipe is for salad and is actually very often used, but instead of purslane, most people put lettuce or lettuce.

To prepare it, you will need 3 cloves of green garlic and onion, 200 g of cucumber, 300 g of purslane, 2 eggs, 4-5 tablespoons of strained yogurt, sprouts, salt and dill to taste. Start preparing the salad with the purslane, which you need to clean from the stalks and soak in salted water.

Then cut it and add the remaining products (excluding eggs), which you cut into slices. Add the milk and season with spices. After serving, add the quartered and pre-boiled eggs.

Our next suggestion is again for the salad - cut the purslane, add green garlic, a little salt and chopped walnuts, apple cider vinegar and olive oil and the salad is ready to eat.

Our latest recipe is for rice with vegetables and purslane - a dish that is a side dish to something meaty and basic. Here are the products you need:

Rice with purslane

Required products: 1 tsp. rice, 250 - 300 g purslane, 1 onion, carrot, ½ teaspoon peas, ½ teaspoon corn, black pepper, salt, oil.

Preparation: Stew onions and carrots in fat and then add peas and corn. Stir and leave for a few minutes, then add the rice and pour water.

Allow the rice to soften, then add the purslane and salt as well as the black pepper. You can also add some broth during cooking, if you prefer.
