Research at the University of Pisa examines twelve species of plants that are often used only as ornamentals - violet, petunia, fuchsia and others.

An interesting finding is that the antioxidant power of flowers is significantly higher than that of ordinary vegetables, with the exception of borage and calendula with measured lower values.

Part of this high antioxidant activity is due to the high content of anthocyanins, at least in the case of red or blue flowers, and in fact the best nourishing properties are available in the most pigmented flowers - said the researchers.

The study evaluates the nourishing properties and attractiveness of flowers through a taste test. Most flowers have a palpable taste. For example, the Latin resembles a turnip, and the begonia resembles the taste of a lemon.

Among the flowers rich in antioxidants, scientists point to begonia, Latin, violet, petunia, fuchsia, borage and calendula.

Beyond the definite initial mistrust of this strange food, flowers often resemble spicy aromas and acids, sometimes similar to ordinary vegetables, but with a different texture and taste, which is softer and more fragrant.
