Japanese recipes for the preparation of Skipjack Tuna, also known as bonito, are innumerable, as its catch is not small. You can easily be prepare the bonito as well at home according to a Japanese recipe, as these fish are already found in our country, as long as you shake or just get lucky.

Necessary products: 500 g bonito with skin, 7 tablespoons soy sauce, 5 g fish seasoning, 7 tablespoons rice vinegar, 1 leaf of seaweed kombu, 1 lemon, 1 slice of ginger, a few sprigs of mint, 25 g of white radish, 3 dried hot peppers, 2 sprigs of fresh garlic, salt and pepper to taste.

Method of preparation:
In a bowl, mix soy sauce, rice vinegar, 8 tablespoons of lemon juice, fish seasoning and kombu leaf. Stir well and leave the sauce in the cold to stand overnight.
The fish is cleaned, salted, seasoned with black pepper to taste and strung on skewers so that it can be baked directly on the heat from the hob. The idea is to be able to hold it comfortably so you don't get burned.
Bake striped tuna on both sides, on the side of the skin it should acquire a golden color, and on the other it should turn slightly white. Immediately afterwards, immerse in cold water, remove the skewers, dry and cut crosswise into slices.

Drizzle with the rest of the lemon juice and let stand for a while.
Separately mix the finely chopped garlic, mint and ginger and spread this mixture on the fish on the skin side.
Grate the turnips and mix with the mashed peppers.
The fish is served together with the resulting radish sauce and as a garnish the pre-squeezed broth obtained from the soy sauce, vinegar and spices is served to it.
