Turkey meat is extremely useful. It contains a large amount of protein, minerals, and the best part is that it is low in fat and does not fill up. Although these birds do not originate from Europe, and the Aztecs and conquistadors have the credit for their domestication and transportation to the Old World, respectively, they have become traditional for the Bulgarian table, especially at Christmas and New Year.

In addition to the health benefits of turkey meat, it is preferred because it is easy to cook, comes in different sizes, and a well-cooked turkey looks great placed on the table.

It is preferable that when cooking turkey meat, it is not frozen. We recommend that you order or keep fresh meat before major holidays. When the turkey is frozen, its juices turn into crystals. When melted, these crystals destroy the protein cell membranes in the meat and some of the juices leak out. This is exactly the reddish thing you usually see on the package. Frozen turkey can never be as juicy as fresh.

However, as useful as it is, turkey meat is not so common. So if you end up with frozen meat, allow at least two hours to thaw it.

When you start roasting meat, it releases juices. Drizzle the turkey with these juices to make its skin crispier and golden. Don't worry that they will penetrate the skin and moisturize the meat. If the turkey starts to darken too much during roasting, cover it lightly with aluminum foil.

Fresh or frozen turkey is baked for three to five hours. If it is stuffed, you should spend more time on it, and if it is not, the heat treatment interval is shorter. The perfect baking temperature is 170 degrees. Always place the meat in a preheated oven, otherwise it will dry out too much and the turkey meat will generally be drier. Always use a meat thermometer to be sure of the roasting temperature.

It is also important to know that a standard (7-8 kg) turkey can feed about 14 people. For larger specimens (12 - 14 kg) the portions are enough for 20 and more people. When choosing a turkey, you need to know the size of your oven and make sure the bird will fit.
