It was mainly used for canning meat, which gave it a specific taste and aroma, and also allowed it to be stored for a long time before being consumed. By being exposed to smoke and air, meat acquires an antioxidant effect.

This does not allow pathogenic bacteria to multiply for a long time. Today, however, such a reason would hardly make anyone reach for smoked meat. But for a picnic or a long trip it is irreplaceable.

As for the useful properties of smoked chicken, they are as much as in boiled or steamed chicken. The difference is that the smoked product has a certain set of spices.

The positive factors that would make many people buy smoked chicken are the following - it is stored for up to 48 hours without a refrigerator, has a specific taste and aroma and goes well with other products.

Instead of buying smoked chicken, which when smoked in the factory can not get away with different types of preservatives, which make it even more durable, it is better to make homemade smoked chicken.

This will guarantee not only its better taste, but also its wonderful useful qualities, which will be fully preserved. Most fishermen have a special smoking device, so you can borrow from a friend-fisherman.

To get a smoked chicken, first cut its cleaned body in half and hammer it with a wooden mallet or place it between two cutting boards and hit it with something heavy.

This is done to make the bones and joints softer and the brain out of them. Then heat water and prepare a solution using half a tablespoon of salt, bay leaf, two cloves of finely chopped garlic, black peppercorns, a little cinnamon, a teaspoon of sugar and half a teaspoon of ginger.

You also need three tablespoons of vinegar. Put the chicken in a deep saucepan and pour the saline solution over it. Leave to stand for two days. Then take out the chicken and make incisions in which you put garlic cloves and pieces of bacon.

For a few hours the chicken should hang hanging, then start smoking. The initial heating should be maximum, thanks to which the glow on the skin of the chicken is obtained.

During smoking, the chicken is periodically immersed in the saline solution to make it more fragrant. Smoked chicken gives an amazing taste to Caesar salad, as well as Russian salad.
