On February 14 we celebrate the traditional Bulgarian holiday Trifon's Day. We can also meet him as Zarezanovden, Trifon the drunkard, Trifon Chipia. Saint Tryphon is considered the patron saint of vineyards and wine. Not only vine growers, but also falconers, pub owners and gardeners celebrate.
Various rites and customs for Trifon Zarezan accompany the celebration of the holiday. Only finally comes the turn of the festive table.
The most important thing the festive table in honor of St. Tryphon is its abundance. The bread must be freshly kneaded and baked, and the wine must be the best and pour incessantly. Typical traditional Bulgarian dishes that should be present at our table on this holiday are baked ritual bread, obligatory chicken or chicken and roasted nuts or dried fruits.
According to tradition on February 14 the mistress of the house must get up at dawn and knead the bread. You need 1 kg of flour, carefully sifted to leave only the "purest" of it and a teaspoon of salt to knead more easily. Add 2 cups of lukewarm water and knead until the dough begins to form the so-called. hollow. Bake the kneaded pie in the oven and cover it with a brand new cotton cloth to prevent it from drying out.
The main dish on the table should be chicken. Very often the hosts choose to prepare a stuffed chicken in honor of St. Tryphon. Tradition dictates that the hen be filled with rice or bulgur.

Stew a head of finely chopped onion with two to three tablespoons of fat over medium heat. When the onion becomes translucent, add a small carrot and a tea cup of rice. Stir, leave on the stove for about a minute and add 1.5-2 cups of hot water or vegetable broth. Add a pinch of salt and pepper. Boil the mixture for about 10 minutes on medium heat, then turn off the heat and let another 10 "rest" under the lid.
Fill a medium-sized hen with the prepared mixture and sew it well. Put the chicken in a saucepan, on the bottom of which you put a few leaves of sauerkraut, fill it with water and let it simmer over low heat until almost completely cooked.
Your dish will impress even the greatest cooks, if you bake the chicken prepared in this way in the oven for ten minutes.
For dessert, serve hazelnuts, walnuts or peanuts and dried fruits to your guests. Use your imagination and surprise them with candied nuts. They are easy to prepare, all you have to do is add sugar to the nuts and bake them in a moderate oven. Soak the fruits in rum from the night before, and when serving, sprinkle them with powdered sugar.
