Grilled chicken and wheat salad

This salad is a great way for the body to get the necessary nutrients from vegetables, fruits and calories at the same time. Yogurt dressing helps to increase calcium in the bones.

Ingredients: wheat grains, bay leaf, 2-3 spinach leaves, green apple, red kamba, cucumber, yogurt dressing, Dijon mustard, grilled chicken breast, green onions, salt, pepper.

Preparation: Pour four large cups of water into a saucepan. Add 1 cup of durum wheat grains (pre-rinsed and squeezed) and one bay leaf. Once the mixture has simmered, cook under a lid for two hours.

Discard the water and bay leaf and place the wheat in a salad bowl.

Cut in bulk a bowl of baby spinach leaves. Add it to the salad bowl together with the peeled and sliced apple, half diced kamba, 3 tablespoons of yogurt and 2 tablespoons of Dijon mustard. Stir well.

Sprinkle the boned chicken breasts (without skin) with salt and pepper. Place them on a grill pan in which you have previously dripped a little fat or sprayed with cooking spray.

Five minutes for each side is enough to roast the chicken. When done, carefully cut into thin slices.
