Slow Food (literal translation slow food) is a movement founded in 1986 by Carlo Petrini. The movement was created with the idea to preserve local gastronomic traditions.
It is organized in conviviums - local communities of producers and supporters, whose goal is not only economic benefit, but also to preserve unique products in a particular geographical area.
The goals of Slow Food are many, but basically it can be said that the idea is to promote the production and breeding of various crops and animal breeds without the addition of any chemical enhancers.
Presidiums are mechanisms (projects) whose purpose is to support and stimulate local producers economically in order to promote their products. They also monitor quality.
The philosophy of the movement is included in three words - these are good, clean and fear. In other words, food must be produced from quality products and in an environmentally friendly way, be tasty, produced responsibly and not harm the environment. Producers must be adequately rewarded for their work, according to the Slow Food movement.
In fact, Slow Food can be taken as a counterpoint to the well-known in our country Fast food (literal translation - fast food). This is the specific reason why Petrini founded this movement (Slow Food), namely the opening of a new restaurant of the fast food chain in a special place in Rome - the Spanish Steps.
In fact, fast food with a lot of advertising and extremely good marketing has skillfully managed to occupy almost our entire diet. During the lunch break we eat from it if we walk and suddenly get hungry, when traveling or just because we pass by the restaurant. When we feel hungry, this is the first thing that comes to mind that we can eat.
From a healthy point of view, we clog our body with genetically modified products, preservatives, dyes and any other derivatives of the chemical industry. As a result, our metabolism deteriorates and changes begin in our body.
Here is one of the main ideas of Slow Food - to slow down these processes, to make us turn to those foods that are produced in an environmentally friendly way. In this way the local productions will be preserved and we will keep recipes and raw materials characteristic only for the certain settlement.
One of the most important messages of Slow Food is to avoid any preservatives and dyes, to eat clean products with nutritional value. The various delicacies and aromas, in general the local culinary traditions all over the world to be preserved and not to be erased from the fast food.
The NGO Slow Food aims to preserve biodiversity through the so-called Ark of Taste. This is an electronic catalog that includes unique traditional foods that are endangered.
The selection of all of them is based on two criteria - the quality and taste of the product. Bulgaria has three products in this Treasure of Tastes - Karakachan sheep, green cheese, Smilyan beans.
There is an opportunity for direct sales of products from a particular area. They call them Land Markets - mechanisms by which traditional food production is preserved.
