Delicious salad with barley

Necessary products: 1 tsp. barley, 500 g pork fillet, 200 g lettuce, 1 bunch green onions, 1 cucumber, oil, salt, pepper

For the dressing: 10 ml olive oil, 1/2 orange, 1 tbsp. mustard, 1 tsp. curry, 2-3 cloves garlic

Method of preparation: Wash the barley well and fry until golden. Pour in water and boil for 40 minutes at a moderate temperature, then cool.

The meat is cut into cubes and seasoned with spices. The dressing products are mixed together with the squeezed orange juice and the mashed garlic. The meat is marinated in the resulting dressing for 20 minutes.

Fry the pork in oil until cooked. Cut the green onion into small pieces, the cucumber into strips and the salad into large pieces. All products are mixed and seasoned with the meat marinade.

Summer salad with barley

Necessary products: 1 cup barley, 1 zucchini, cut into quarters, 1 can of chickpeas, cherry tomatoes, a few palm stalks, 1 cup almonds (raw or roasted), thinly sliced, 1 handful of parsley, coriander, 2 cloves garlic, the juice of 2 lemons, 1 avocado, cut into pieces, ΒΌ cup olive oil, 1 teaspoon cayenne pepper, salt, pepper

Method of preparation: Boil the barley in salted water for 8-9 minutes. Meanwhile, chop the garlic, parsley and coriander.

The palm stems are cut. The can of chickpeas is opened and rinsed. In a bowl, mix the garlic, parsley, coriander, almonds, palm stalks, tomatoes, lemon juice, olive oil, hot red pepper and chickpeas.
