Summer salad with barley
Necessary products: 1 cup barley, 1 zucchini, cut into quarters, 1 can of chickpeas, cherry tomatoes, a few palm stalks, 1 cup almonds (raw or roasted), thinly sliced, 1 handful of parsley, coriander, 2 cloves garlic, the juice of 2 lemons, 1 avocado, cut into pieces, ΒΌ cup olive oil, 1 teaspoon cayenne pepper, salt, pepper
Method of preparation: Boil the barley in salted water for 8-9 minutes. Meanwhile, chop the garlic, parsley and coriander.
The palm stems are cut. The can of chickpeas is opened and rinsed. In a bowl, mix the garlic, parsley, coriander, almonds, palm stalks, tomatoes, lemon juice, olive oil, hot red pepper and chickpeas.
Put the zucchini in the boiling water with the barley for 30 seconds. Squeeze the zucchini and barley in a sieve and leave under a cold stream of water for a minute. Add to the bowl with the other products and season with salt and pepper to taste. Finally, add the avocado pieces.

Necessary products: 1 tsp hulled barley, 350 g hard tomatoes, pitted black olives, 300 g mushrooms, 1 bunch basil, 6 tbsp. olive oil, salt, pepper
Method of preparation: Boil the barley in salted water for about 25-30 minutes. During this time, blanch the tomatoes in boiling water for about a minute. Squeeze and peel.
Boiled barley is rinsed under running water, drained and dried. Place in a bowl and add the tomatoes, olives, mushrooms and basil. Season the salad with olive oil, salt and pepper. Mix well and serve.
