Bake the base first. To do this, melt the butter and cool it. Beat the eggs with the powdered sugar, vanilla and lemon zest. Add the sifted flour and baking soda, stir, add the butter and almonds and stir again.

Pour into a greased pan and bake for ten minutes in a preheated oven at one hundred and eighty degrees, then increase the temperature to two hundred and ten and bake for another fifteen minutes.

Make a syrup from the water, sugar and cognac. Fifteen minutes before serving the dessert, cut out the inside of the marsh, turning it into a hollow circle with an edge of a centimeter and a half thick.

Put the circle on a plate and moisten it with syrup. Beat the egg whites to a froth, gradually adding the sugar. Preheat the oven to maximum temperature.

Fill the circle with ice cream and top with egg whites so that hot air cannot enter the ice cream. Bake for three minutes in a hot oven until the egg whites are golden. Remove, pour over alcohol and ignite.
