Bugatsa is the name of a Greek pie that has a sweet or salty filling. In most cases, the sweet filling is boiled cream, and the salty can be made of cheese, minced meat, spinach.

To make Bugatsa, you can use puff pastry, ready-made pastry crusts (baklava) or home-made dough, which is rolled into thin or thick crusts, depending on the recipe.

Necessary products:

1 packet of pie crusts

150 g of melted butter

For the stuffing:

1 liter of fresh milk

200 g semolina

200 g of sugar

2 packets of vanilla

pinch of salt

2 tbsp. butter

For sprinkling:

cinnamon

powdered sugar

Method of preparation:

Pour the milk and sugar into a saucepan. Heat them over a moderate heat, stirring occasionally. When the mixture is warm enough, add salt, vanilla and semolina. Stir until the cream thickens. Then remove the pan from the heat, add the butter and stir until completely melted. Allow the cream to cool.

Grease the pan, preferably using a rectangular pan, with oil. Cover it with 9 crusts, sprinkle with melted butter. Don't worry if they are bigger than the tray and hang outside. Pour the filling on top and spread it well. Fold inwards, over the cream, the protruding edges. Then cover the filling with the remaining crusts, re-lubricating each. If you have leftover butter, you can pour it on top of the sweet pie.

If you want the Bugatsa pie to swell and leaf, you do not have to press the crusts.

The Greek pie with cream is baked in a preheated oven at 200 degrees for 30-35 minutes or until it reaches a golden color. After removing it from the oven, you need to wrap it to suffocate slightly. Then let it cool. If desired, you can sprinkle it with cinnamon and powdered sugar.
