It is made from cow's milk in the province of Treviso and is famous for the fact that at the beginning of its maturation it is put in a mixture of several types of wine. It stays in wine for two days, is extracted and matured for 10 months. The hard cheese has a purple rind with the aroma of wine and ripe fruit.

Another famous Italian cheese is Fontina. It is produced in the alpine region of Val Dagosta. The milk used for its production must be used 2 hours after milking.

It is heated to a certain temperature and matured in a cool place for 6 months. During ripening, the cakes weighing 9 kilograms are rubbed with special brushes every day. The result is a soft cheese with a golden color and sweet taste.

Medoro cheese is made in Sardinia. It ripens for 120 days, is firm, with strong fruity notes in the taste. It is dark yellow, with uneven density. It is produced on cakes weighing up to 3 kilograms. Its fat content is almost 50 percent.

Bra cheese is popular in northern Italy. It is made from the milk of Piedmontese cows mixed with goat's milk. Bra cheese matures for half a year. It has a pale gray crust, which becomes dark golden during ripening. It is sweet, with a slightly spicy taste.

Asiago cheese is one of the most popular cheeses among Italians. It has been produced for more than a thousand years. It can only be made in the provinces of Vicenza, Trento, Padua and Trevido.

Asiago matures over 15 months. It is firm and not very greasy. It is often used to make pizza and to decorate salads.

Another famous Italian cheese is Montazio. It does not differ much from other hard cheeses.

Montazio has holes and a golden brown crust. It is made only from the milk of three specific breeds of cows that graze on strictly defined alpine pastures. Sold on cakes weighing 9 kilograms and 10 centimeters high.
