Cooking at home melted cheese is quite simple. It is much tastier than its store counterpart and does not contain chemical additives.
The prepared cheese will have the consistency of the processed cheese sold by the supermarkets, it even tastes better. As for chemical additives, home-made cheese is completely devoid of them. It is therefore absolutely harmless or rather a little more beneficial to health.
Preparation of the base
Put 500 g of homemade cottage cheese in a bowl, add 1 raw egg, 0.5 tsp. baking soda and 2/3 tsp. sol. To ensure that the final product does not become cottage cheese, mix very well with a mixer or blender. The base after mixing should be a homogeneous mixture, resembling sour cream in density.
Water bath
Choose a pot with a diameter so that the bowl with the mixture stays at the top in the hole and does not fall to the bottom, 1/3 of it fill with water and put it on the fire. When the water in the pot boils, reduce the heat and place the bowl with the base on it, stirring constantly. After about 10 minutes the base of melted cheese will become liquid, which means that the curd begins to melt. Do not stop stirring and continue the cooking process.
After another 10-15 minutes, the cheese in the bowl will thicken and turn into a sticky mass.
If desired, add ground spices, garlic and, if necessary, salt to the melted cheese. Remove the bowl from the water bath and transfer the contents to a suitable container, pre-lubricating the inside of the walls with oil. Once the cheese has cooled, place it in the refrigerator for 8 hours to thicken and get the necessary taste.
After the allotted time, remove the melted cheese from the refrigerator, prepared by your hands, spread a slice of fresh crispy bread and try.
