Shiitake mushroom, also called the Imperial Mushroom, has a history of several thousand years of cultivation and its use for healing and cooking. The name of the mushroom consists of two words - shea / chestnut / and take / tree /. Literally translated, the name of the mushroom means a mushroom that grows on a chestnut.

In Bulgaria, this type of mushroom is found only in canned form or in the form of additives, as well as in some of the large fresh chains. This type of mushroom, as we mentioned, is also called the Imperial Mushroom, because in ancient times during the Ming Dynasty it became a mushroom with healing properties and an aid to reaching ancient times. All the mushrooms collected were carried to the imperial court, the common people had no access to them and were not known at all.

IN the Shiitake mushroom contains valuable polysaccharides, lentinan, vitamins A, B1, B2, B6, B12, C, D, E, calcium, magnesium, phosphorus and others. The fungus contains strong immunoactive substances that strengthen the body's defenses. This type of mushroom has an unusual taste and unusual color. There are many ways to prepare this type of mushroom.

Black mushrooms with shrimp

Necessary products: green beans 100 g, shrimp 150 g, soy sauce 5 tablespoons, Chinese instant noodles 1 packet, shiitake mushrooms 400 grams, vegetable oil for frying, garlic 3 cloves.

Method of preparation: Boil the shrimp in broth for 4 minutes, then cool. Cut the mushrooms into strips and fry in butter. Then add the chopped garlic, shrimp, soy sauce and cook for another 2 minutes. Garnish for this dish is Chinese noodles, which is prepared according to the instructions on the package.

Shiitake salmon and mushroom soup

Necessary products: salmon fillet about 300 g, 4 Shiitake mushrooms, Dashi broth 1 liter, Miso pasta 3 tbsp, lemon juice 2 tsp, soy sauce 4 tbsp, chili to taste, rice spaghetti 200 grams, seaweed for sushi.

Method of preparation: Coat the fish with lemon juice and leave it to marinate for 10 minutes. Then grate the ginger on the fillets and bake them in the oven for about 15 minutes. The finished salmon is drizzled with soy sauce. Bring the broth to a boil, then add the mushrooms and chopped seaweed.

Put the pan on a very low heat, put the Miso paste and bring to a boil. After about 5 minutes, remove the pan from the heat and place the miso paste in the broth.

Boil the rice spaghetti separately and serve the soup as follows: put the spaghetti on the bottom of the plate, then a piece of fish, and then the mushroom and seaweed broth. Finally, garnish with crushed hot peppers.
