Hot peppers are a nice addition to dishes. There are different methods for their preservation. Three and a half kilograms of peppers and salt are needed to preserve chorbadji peppers.

Salt is added to four liters of water - about one kilogram. The water is boiled and then allowed to cool. At this time, the peppers are washed and their stalks are cut off, and the seeds are shaken. Each pepper is pierced in several places with a thick needle.

Peppers are packed tightly in clean dry jars. They are flooded with cooled salt water. They are closed and left for a few hours. During this time, the peppers absorb some of the water and need to add a little more. Close the jars and store in a cool place.

Small hot peppers are canned by washing them in advance, removing the stalks and seeds and frying the peppers themselves lightly in oil.

At this time, prepare a tomato sauce by mashing or finely grating the tomatoes and then stewing to evaporate half the volume. Strain and add two tablespoons of salt and one hundred grams of sugar to every two liters of tomato sauce.

Arrange the peppers in jars, pouring tomato sauce over each row. The jars are closed and sterilized for twenty minutes.

Another way to preserve peppers is with the use of many spices - garlic, tarragon, black peppercorns, cherry leaves, basil, cloves, cinnamon, horseradish.

For the marinade, add four teaspoons of salt and two tablespoons of sugar to each liter of water. Add a teaspoon of vinegar to each jar.

Wash the peppers, stuff them into jars scalded with boiling water and add the spices. The peppers should only reach where the jar begins to narrow.

The marinade is prepared by boiling the water with the sugar and salt. Pour the hot marinade over the peppers and cover. After cooling, add the vinegar, close the jars and turn over. After a few hours, move to a dark and dry place.
