Meatballs with sauce are a delicious traditional Bulgarian dish. Prepare from 500 grams of minced meat, 1 onion, 1 kg of potatoes, 3 tablespoons of mashed potatoes, 1 bunch of parsley, 1 teaspoon of red pepper, black pepper and salt to taste, frying oil.
Peel an onion and chop finely, mix with the minced meat, add the finely chopped parsley, black pepper and salt. Mix everything well and form meatballs. Each meatball should look like a ball. They are fried and taken out in a separate plate.
Fry the flour, add the red pepper and tomato paste. Add a little boiling water and add the meatballs and diced potatoes to the mixture. Meatballs can be stewed with potatoes or baked.
One of the most traditional dishes on the Bulgarian table is pork with rice. You need 600 grams of pork, 1 cup of rice, 200 milliliters of broth, spices to taste.
The meat is cut into pieces and fried, adding a little water to stew. Add a glass and a half of boiling water and when the meat softens, add the rice. After simmering for ten minutes, transfer to a pan, sprinkle with spices and bake, adding the broth.
Another traditional, although not so popular dish, which is also suitable for holidays such as St. George's Day and Easter, are lamb grilled in the oven.
You need a kilo of lamb intestines, 200 milliliters of broth, 100 grams of butter, 1 tablespoon of tomato paste, 1 bunch of green onions, 1 tablespoon of flour, 1 teaspoon of red pepper, salt and pepper to taste.
The intestines are washed very well inside and out under running water. Then three by three are braided. Arrange in a round tray. Bring the broth to a boil and add the butter and paprika-fried flour, then the tomato paste.
The intestines are filled with this mixture and sprinkled with chopped green onions and parsley. Bake in the oven until pink.
