Some stores push their customers yellow cheese like rubber, prepared from blanks containing technological additives and starch, biologist Dr. Sergei Ivanov revealed to the Telegraph.

This fake product does not meet in any way state standards for yellow cheese, although stores sell it as such. It is not even clear whether it contains milk, explained Dr. Ivanov.

According to him, they are imported from abroad ready blankscontaining starch and technological additives known as E's. In the end, the product obtained from the blanks is sold at BGN 10 / kg, although the price of real yellow cheese at the moment cannot really be below BGN 13-15.

Dr. Ivanov claims that this product has been known for about 3 years ago, but today it is gaining popularity in the shops. At the same time, dairy products with palm oil have recently lost support among producers as the price of butter rises.

If until a few years ago the unfair trade practice was with the palm, now it is with the water, says Sergei Ivanov. The doctor recalled a study by the Active Consumers Association, according to which there is up to 78% water in some types of cheese on demand, according to BDS - up to 54%. There are also intermediate variants called "fast-ripening" with about 60% water.

According to the bulletins of the State Commission on Commodity Exchanges and Markets imitation cheese with palm oil has risen in price. At the beginning of 2020, the imitation product cost BGN 2.79 per kilogram wholesale, while in the middle of May of the same year it reached BGN 3.26 / kg. The price continues to grow, currently reaching BGN 3.60 / kg.

The opposite trend is observed in real cheese and cheese. At the same time, their price has slightly decreased over the last year. A kilogram of cheese is currently sold wholesale for an average of BGN 6.79 / kg, according to the DKSBT bulletin, while at the end of April, 2020, its price was BGN 6.95 / kg. There is a similar trend in yellow cheese - its average wholesale price has fallen for the last year from BGN 11.16 / kg to BGN 10.87 / kg.

The head of the State Commission on Commodity Exchanges and Markets, Vladimir Ivanov, commented to the Monitor newspaper that since the beginning of the pandemic there has been an interesting trend - with each lockdown and closing of restaurants, the prices of real cheese jump up.

According to him, this shows that vegetable fats are widely offered in restaurants. Thus, when establishments are closed, the share of real cheese in demand increases, and palm oil products stagnate in warehouses.

There is a trend in people's preferences. They are looking for better and better Bulgarian products, according to Vladimir Ivanov. At the same time, according to him, the quality of the products on the market has also increased.

According to V. Ivanov, the cheese, which in the store is between BGN 7 and 12 / kg, is of controversial quality, and that over BGN 12 / kg is of good quality, as it is impossible to cover below this price. production and sales costs and remain profitable. He says that good aged cheese is more profitable as a product than cheap cheese after the water is removed.

So, if you want to eat really tasty cheese bread or yellow cheese in the oven, you should choose products with a higher price or rely on local producers with proven product quality.
