Nectars are products that contain all the elements of the colloidal disperse system. They are the richest products and are closest to the raw material from which they are made. A product with a richer colloidal dispersion system creates much more problems in achieving its colloidal stability and therefore more attention should be paid to the stability of nectars.

Fruit-aromatic bases are usually products derived from citrus fruits or other aromatic raw materials. They are most often citrus juice, to which are added 10 to 20% ground fruit or peel. The aim is to import a certain percentage of the water-insoluble dyes and aromatic substances contained.

Juices often contain a lot of sugar and calories. Experts have found that a package of 250 g can contain up to 6 teaspoons of sugar. One liter of grape juice contains 1100 kcal, and 1 liter of apple juice - 900 kcal.

The juice concentrate in our country is almost always delivered from another country, water is added to it on the spot and then it is put on sale. Unfortunately, in the process of concentration under the influence of high temperature, half of vitamin C is destroyed, aromatic substances are dissipated, and some amino acids and carbohydrates change their structure and are no longer useful for the body.

All packaged or bottled juices and nectars must undergo heat treatment. And as is known, even the shortest heat treatment oxidizes and destroys nutrients.

The longer the products are processed, the less vitamins remain. However, natural juices contain a certain, albeit minimal amount of vitamins.
