This year on March 20 we celebrate St. Todor's Day, also called Horse Easter. A lean table is prepared for the holiday, which must be attended by ritual bread.
The holiday is always on the first Saturday after Sirni Zagovezni, the last day of Todor's Sunday. Todorovden marks the beginning of the spring holidays in the calendar.
On the day when we honor the holy martyrs Todor Tyron and Theodore Stratilat, a table of lean dishes of corn, wheat, beans, potatoes, rice, lentils and mushrooms is arranged, which are most often prepared in the form of soup.
According to the belief with Todorovden the end of winter and the beginning of the warmer months are set. Traditionally, horse races are organized today, which reminds of the renewal of nature.
On this day, a ritual bread called kolak is kneaded, which should be in the shape of a horseshoe, and cloves of garlic, walnuts or salt are sprinkled on it. The ritual bread is distributed to the neighboring houses so that the women can give birth easily.
As Saint Todor is defined as the patron saint of fertility, according to tradition, the ritual bread for the holiday is kneaded by the youngest bride in the family.
To prepare the traditional cake you will need half a kilo of flour, 200-250 milliliters of water, 1 cube of yeast, 2 tablespoons of vinegar, 1 tablespoon of sugar, 1 tablespoon of salt and finely ground walnuts for sprinkling.
Kneading the dough begins with the flour, which is poured into a bowl, making a well in the middle. Put salt, sugar, vinegar inside and pour 1 teaspoon of water, mixing with flour.
Then replace the dough with all the flour and water. Form it into a circle and leave it to rise for about 30 minutes. Form the risen dough into a horseshoe shape.
You can set aside part of it for decoration by making a horse, clover and sun - symbols of today's holiday, placing them on the bread. Sprinkle with walnuts and bake in the oven at 220 degrees for about 80 minutes.
