Bulgarians are one of the people who consume the most bread. Today it is difficult to find quality and tasty bread. The stores offer different types of pasta - wholemeal, multigrain, river bread, black, type, einkorn, vegetables, etc.

In the factories where the bread is made, all kinds of improvers, preservatives, leavening agents and colorants are used. This achieves the volume of the bread and increases its durability. The bread produced in this way is not tasty, much less healthy.

Real bread is not made with yeast, but with yeast. It is written everywhere that yeast is harmful to the body and is a toxic product. In the past, when there was no yeast, our grandmothers kneaded their bread with yeast and baking soda.

Today, yeast makes bread light, artificially puffed, and real bread is heavy. Its bark on top is hard, but the inside is soft. Every chef who has kneaded bread dough at least once knows how the kitchen smells of freshly baked homemade bread.

Handmade bread in the shops has a high price, because the work of the master is invested in it, it is prepared with more attention and love.

Real bread made with yeast has a slightly sour taste due to the natural bacteria in the yeast. Wholemeal flours are useful, but harder to leaven. Dark flours typically contain a lot of fiber, minerals and bread is lower in calories.

That's why I often prepare pasta temptations with type flour. It mixes easily, rises quickly and swells very well.

The most useful of all is bread with einkorn. It is rich in fiber, vitamin E and magnesium. This type of bread is low in gluten, so it is preferred in a gluten-free diet.

Factory bread in plastic wrap is awful! It makes a person fat, difficult to digest and if it is soft, it leaves a ball in the stomach. This does not apply to rural, home-made bread.

Yeast for live bread

You need: 100 g flour, 1 tbsp. wheat bran, spring water.

The following products are needed for the bread: 700 g flour, 1 tsp. salt, 1 tsp. vinegar.

Preparation: In a bowl (just not plastic, let it be glass or ceramic) mix the yeast products, such as cake batter. Leave at room temperature for 1 night. It can be stirred from time to time. Wait 2-3 days. During this time the mixture ferments, bubbles appear. Add 1 tbsp. flour and a little water, stir and leave for another 2 days until it swells again.

The yeast for ours live bread is ready. Then mix with 1 tsp. salt and 1 tsp. vinegar and 300 ml of lukewarm water. Knead a soft dough, arrange it like a pie in a greased pan. Leave to rise for another hour and bake in a preheated oven at 180 degrees.

1-2 tablespoons are separated from the prepared yeast before kneading. and mix with new flour and water for new yeast. The yeast is mixed with a wooden spoon. Thus prepared, you will eat real, tasty and healthy bread!

That is why bread with yeast is called live bread.
