Acaui, also known as Ackawi, Akawieh, Akkawi, is a popular white cheese typical of the Middle East. Its name is associated with the city of Accra, northern Israel, where the dairy product is believed to originate.

Acai is usually prepared with cow's milk, but it is possible that goat's or sheep's milk may be present in its composition. It is most often produced in a rectangular, flattened shape, but sometimes a more rounded shape can be found.

Necessary products: 3 and ½ h.h. wheat flour, 1 tbsp. dry yeast, 1 and ¼ tsp. warm water, 1 tbsp. salt, 1 tbsp. sugar, 1 tbsp. olive oil, 500 g Acaui, 2 tbsp. black cumin or other seeds for sprinkling

Method of preparation: Dissolve the yeast in warm water and set aside for 10 minutes. In a deep bowl, mix all the dry ingredients (excluding the cheese and seeds). Gradually add the liquid with the yeast and the vegetable fat.

Stir and quickly knead a soft dough. Wrap it in a clean towel and leave it in a warm place for 2 hours until it swells. Meanwhile, soak the cheese in cold water for 20 minutes to desalinate.

Then return to the dough. Place it on a plate and cut it into balls. Stretch each slightly with your hands in an elliptical shape. If desired, you can also shape the edges of the pastries. If you find it difficult to work with your hands only, use a rolling pin.

Place them in a tray on baking paper and let them rest for another half hour. During this time, preheat the oven to 200 degrees.

Sprinkle the risen dough with crushed acai cheese and seeds. Bake in the oven for 18-20 minutes, or until the loaves are golden.
