It has been made for centuries in Turkey as well as in Greece. Of course, although the food is the same, different regions have different compositions, different proportions of products and different disputes about its origin.

More or less sesame tahini, with or without yogurt, sometimes a little tomato and aromatic spices such as mint. It's all a matter of taste. And with it, the names change.

In Lebanon, Syria and Egypt the tempting snack is called baba ganush, in Israel it is more like mutabal (it is stronger in taste with sesame and sometimes even mayonnaise), in Greece it is Melizano Salad, and in Turkey - eggplant salad. They are all worthy of adoration!

Baba Ganush it is usually served as an appetizer in the Middle East, but it can be incorporated into a recipe, for example with pasta or as a side dish to meat - it will be truly divine. Fresh, fragrant, delicious!

And here is the recipe for this spice hero of the Middle East:

For four people you will need at least two aubergines (about 800 g), 1 tablespoon of sesame tahini, freshly squeezed juice of one lemon, a clove of garlic, salt and olive oil.

Preheat the oven to 200 ° C. Wash, dry and cut the aubergines in half lengthwise. Place them on baking paper, you can add a little salt and olive oil, and bake for about 30 minutes.

Beat the eggplant with the mixer together with the sesame tahini, lemon juice, garlic and a pinch of salt. Add four teaspoons of olive oil and, if desired, a little water.

Serve with a few sesame seeds, sprinkle with olive oil and cover with foil. It is good to breathe the mixture before consuming it.

To the delicious snack you can add a few toasted slices, but it's best to make a warm loaf to your liking.
