According to the Ministry of Agriculture and Food every sixth lump cheese, which is produced in our country this year, has added hydrogenated fats. At the same time, 30 Bulgarian companies have officially admitted that they use this type of fat in the food they produce.
Every consumer who carefully reads the labels of the goods in the store notices that the information in them is becoming increasingly scarce. We can only guess how many more manufacturers do not mention exactly what they put in their products, since the inscription vegetable fat often replaces hydrogenated.
They call this type of fat the modern killer. Hydrogenated fat deserves a similar name. It is actually a product that is enriched with hydrogen atoms artificially. In this way, the liquid fat becomes solid and embedded in the food, giving them the density and structure that consumers are looking for.
However, the hydrogenated fat increases bad cholesterol at the expense of good cholesterol and leads to an increase in blood pressure, heart disease and is pointed out as the main culprit for frequent strokes and heart attacks.
As hydrogenated fat it is most often used palm oil in the cheese. It is a major resource of the food industry, especially in fast food restaurants, but also finds its place in the production of bread, dairy products, chocolate, confectionery, butter and margarine, cereals and more.
The use of palm oil in the production of dairy products, mainly cheese in our country, has increased this year compared to last year. The cheese with palm oil appears imitation product of real cheese. The peak of the supply of imitation products is in the summer months, when it is the tourist season and the need for more food on the market increases.
This type of production finds its market mainly in small towns and villages. It is due to the low purchasing power of the people. According to producers and market observers, there is no possibility to ban this type of production. It is marketed in restaurants and hotels that offer all-inclusive service.
Hydrogenated fats are used mainly in the production of foods with powdered milk, which is cheap as opposed to raw milk. The producers warn that cheese under BGN 6 per kilogram and yellow cheese under BGN 10 must have added palm fat. During the inspections it was found that most often the manufacturers do not put an inscription that the product is imitation.
