In 2008, a non-governmental organization called the Nordic Food Laboratory was set up in the Danish capital, involving several Danish top chefs, famous professors from the University of Copenhagen, chef artists, designers and education professionals. Scientists are trying to find the nutritional potential in every type of product, including insects, blood, fish offal, fermented products that have developed different types of mold. The idea is, by revealing the high nutritional value of certain foods, to restore people's trust in them.
Scientists are currently working on how to make different types of insects - from ants to larvae, more appetizing. The rest of the experiments of Scandinavian scientists are focused on animal blood. They believe that clotted blood can be used as a substitute for eggs, which can help those who have an intolerance to eggs.
Some members of the laboratory go even further, explaining that the potential of feces as a food source should also be explored. The main thesis in their disgusting theory is the fact that young elephants, hippos, koalas, rabbits and pandas eat their mother's feces to introduce beneficial microbes into their digestive system.
Scientists also justify their research by the fact that the Earth is able to feed the current consumption of a maximum of 10 billion people - a figure that will be reached in the next 30 years. Then there will be famine and the inevitable ecological catastrophe. According to them, it is by inventing alternative food sources that the world will be able to survive.
