Grana Padano is one of the famous Italian cheeses. It is made from cow's milk and has given its name to a whole group of cheeses. The word Grana is now used for all hard dry cheeses that are grated. The word padano means that it was made in the area of the river Po.
Grana Padano cheese matures for at least a year, and some types ripen for eight years. It is sold in the form of large cylindrical cakes weighing from 24 to 40 kilograms. They are covered with golden-yellow bark.
Grana Padana cheese is used in grated form, but it is also delicious in thin slices with bread and quality white or red wine.
Grana Padano cheese is salty, with light walnut notes in the taste. According to experts, its taste is reminiscent of Parmesan cheese. Therefore, it can replace parmesan in salads, various types of pasta, sauces and cream soups.
The classic Bologna lasagna is made with Grana Padano cheese. You need 500 milliliters of Bolognese sauce, 12 lasagna crusts, 150 grams of Grana Padano cheese, 50 grams of butter, 1 tablespoon of flour, 90 milliliters of milk. Prepare Bechamel sauce by frying the flour in butter and adding warm milk. Stir until boiling and add salt.
Put a few spoons of Béchamel on the bottom of a pan, on top - 3 tablespoons of Bolognese sauce. Arrange three lasagna crusts. Top with Bolognese, bechamel and grated Grana Padano cheese on top. Peels are lined up, Béchamel and Bolognese are poured on them, sprinkled with Grana Padano. Bake for 30 minutes at 200 degrees.
Grana Padano cheese is also used in some Italian desserts. Italian candies with Grana Padano are very spectacular and delicious. You need 100 grams of Grana Padano cheese and 100 grams of bitter chocolate.
The cheese is cut into elongated pieces 2 cm long. Melt the chocolate in a water bath and melt the pieces of Grana Padano in it. Arrange on foil smeared with olive oil and leave to cool.
Grana Padano cheese is a good addition to salads. It is used to make a delicious salad with figs and walnuts. You need 50 grams of walnuts, divided into halves, 2 tablespoons of brown sugar, 2 tablespoons of balsamic vinegar, 6 large figs, cut into quarters, half an iceberg lettuce, 50 grams of Grana Padano cheese, cut into thin slices and 1 tablespoon of zehin.
Roast the walnuts in a dry pan. Separately caramelize the sugar and add the balsamic vinegar. Add the chopped figs and cook for 2 minutes. Divide the salad into four plates, put the figs on top and pour the remaining sauce from the frying. Sprinkle with walnuts and sliced Grana Padano cheese. Sprinkle with olive oil.
