Chives are among the easiest plants to grow, both in the garden and in pots at home. It is drought tolerant and rarely susceptible to disease and pests.

Only a sunny place and nutrient-rich soil are needed for its cultivation. It is valuable because of its specific taste, which is not as strong as that of ordinary onions, but on the other hand it resembles in part that of garlic.

The usable parts of wild onions in cooking are the stems and especially the leaves of the plant. They are very fragrant, with a fine and delicate onion taste. Purple-pink flowers are used less often for consumption. They are mostly used for food decoration.

The delicate structure of wild onions does not allow it to be subjected to heat treatment. Therefore, it is placed in the dishes just before serving.

Usually, green wild onion feathers are used in salads and to decorate various dishes. In Northeastern Bulgaria it is a mandatory ingredient in Easter and spring salads.

In addition to fresh, wild onions are also used as a dried herb. Even in this state, its taste is preserved. It is used for seasoning both fresh salads and all kinds of dishes with cooked meats, mushrooms, eggs, potatoes, rice, chicken and others. Dried and crushed wild garlic is usually part of the much-loved colorful salt in our country.

In addition to flavoring salads and dishes, wild onions bring many benefits to the body. It has been shown to reduce bad cholesterol and blood pressure. It also fights bacteria in the body.

Lemon chicken with chives

Necessary products: 2 fresh lemons, 1 tsp. dry white wine, 2 shallots, finely chopped, 1/4 tsp. olive oil, 5 tbsp. chopped fresh green spices: sage, thyme, parsley, chives, 2 cloves crushed garlic, 1.5 kg chicken, salt, freshly ground black pepper to taste.

Preparation: Grate the lemon peel in a large bowl to absorb the chicken portions. Then squeeze all the lemon juice, removing the seeds. Add the wine, 1/4 tsp. olive oil, spices and garlic.

Add the chicken pieces, which should be covered on all sides with the marinade. Cover with a lid and leave to cool for a few hours.

Preheat the oven to 180 ° C. 2 tbsp. olive oil is heated in a large pan. Drain the chicken pieces and sauté over medium heat until golden on all sides.

The meat is placed in a large pan. The reserved marinade is poured into the pan and left to boil. When this happens, pour it over the chicken. Bake for 25-30 minutes. Season with salt and pepper.
