The big restaurants on the native Black Sea coast prepare the traditional tarator only with mineral water because of the danger of infections after the floods in Varna and Dobrich.

Many restaurants in Sunny Beach, Varna, Sozopol and Golden Sands have started preparing summer soup with mineral water instead of tap water to avoid the risk of infection.

The managers of the big restaurants in our seaside resorts say that tarator is among the most ordered dishes in the summer and because of the warnings about the danger of hepatitis A in tap water, it has been replaced with mineral water so that summer soup is not removed from the menus.

Tarator prepared with tap water is one of the safest ways to transmit viruses. The water along the entire Black Sea coast is unfit for drinking, and although the soup attracts tourists with its low price, only a few hours after consumption, people show the typical symptoms of seasickness.

One of the tourists in Burgas says that he was in bed for three days with a high temperature because he ate a bowl of tarator in a restaurant in the seaside town.

Most of the chefs said they had imposed severe sanctions on cooks who did not cook with mineral water. Employees will be fined BGN 100 each if they allow themselves to pour even a drop of tap water into a food.
