Fava
Favata is prepared from a specific variety of yellow peas. It is served as an appetizer or as a vegetarian main course. It can be combined with any type of alcohol.
Necessary products: 300 g Greek fava, 800 ml of water, 1 head of yellow onion, cut into four, 50 ml of olive oil, salt and white pepper to taste, finely chopped red onion for garnish.
Method of preparation: Wash the fava well and let it boil over high heat. Remove the pan from the heat. Scrape the foam that forms on the surface of the water. Put onion, salt and white pepper in boiling water.
Boil the water for about 30 minutes until the fava softens. When ready, add olive oil, stir and leave for 10 minutes. Then carefully puree. Serve on a plate and sprinkle with olive oil and finely chopped red onion and green thyme or basil.
Salad with orange juice and roasted vegetables
This type of fresh salad is not only extremely tasty, but also very useful. Combines well with light spirits.
Necessary products: 2 zucchini, 2 eggplants, 2 carrots, 4 red peppers, 4 tbsp. olive oil. For the dressing: 6 tbsp. lemon juice, 6 tbsp. orange juice, 3 tbsp. olive oil or vegetable oil, 3-4 finely grated garlic cloves, finely chopped dill, salt and pepper.
Method of preparation: Peel the aubergines and slice them. Soak them for 20 minutes in water. Cut the zucchini in the same way, but without peeling them. Peppers and carrots are cut into strips. Squeezed aubergines and zucchini mix in a large bowl with the remaining vegetables and sprinkle with olive oil. Roast them on a grill pan, plate or grill. Pour the dressing over them and leave them in the fridge for 1 hour.
Greek sarma with walnuts and raisins
Usually the various Greek sarmas are offered as an appetizer. Serve cold and garnished with lemon.
Necessary products: 2 tsp rice, 250 g mushrooms, 50 g raisins, 50 g walnuts, 1 onion, salt, pepper, paprika, 6-7 tbsp. oil, 30-40 pcs. vine leaves, dill.
Method of preparation: Cut the onion lightly and fry it. Add the washed rice and fry until glassy. Add the mushrooms and a glass of water. Once the liquid has evaporated, add the remaining products, mix well for 5 minutes and remove the mixture from the heat.
Simmer the vine leaves lightly with warm water. Fold small sarmi. Put a plate in a deep saucepan, arrange the sarma on it and pour water over it. Cook over low heat for an hour.
