Leek has been revered over the years by many civilizations, including Ancient Rome and Ancient Greece. They accepted vegetables as the embodiment of their mysticism and power. In contrast, in Wales, they adopted leeks as their own, borrowing them, and so the vegetable has become one of the emblems of Wales.
Who would have guessed that Welsh soldiers wore leeks on their hats in the battles they fought to distinguish them from their opponents. It is also a mystery that they chose this particular vegetable. The things that explain this act are, for example, that leeks were grown in October, and that was when the battles were fought.
It may be a coincidence, but leeks are one of the few vegetables that grow in Wales in March. Many people believe that this is due to the fact that St. David included leeks in his fasts, which represented the consumption of bread, water and herbs.
Today, scientists have proven that leeks are not just a second cousin of onions. They have found many useful ingredients included in it, as well as in many other vegetables of the onion family - Alium, which includes garlic.
Studies show that eating vegetables from the Alium family is very good for the body. Taking them at least twice a week protects us from cancer of the colon, stomach and prostate, and also reduces cholesterol levels and high blood pressure.
Leek is also a very good source of iron, manganese, vitamin B6 and vitamin C.
When we use leeks for cooking, its soft and sweet aroma makes it a favorite among the members of the Alium family. In addition, it can be safely used in cooking without worries that it will dull the aroma of other ingredients in food.
Leek has a unique mild taste that allows it to be prepared in many different ways - steamed, stewed, baked alone or combined with other ingredients.
The taste of leeks is considered to be much more refined than that of onions. Therefore, it is used in the famous French [onion soup], as well as in many other soups and sauces.
Nowadays, leeks are one of the vegetables used in almost all dishes with fresh vegetables, as it is perennial. It is also widely used for fresh salads and arrangements. Due to its symbolic significance in Wales, vegetables are present in many of the recipes there.
