Method of preparation: In a small bowl, combine olive oil, mustard, lime juice, ginger, garlic, sugar and paprika. Place the salmon steaks in a glass pan and cover with the marinade. Wrap in foil and place the pan in the refrigerator for 1 hour.
Heat the grill to a moderate temperature, arrange the salmon strains strained from the marinade and bake over medium heat for about 7 minutes on each side. Ready grilled fish should be easily pierced with a fork.
Grilled dorado
When roasting dorado fish, add herbs to the stomach, such as parsley, sage, rosemary and basil.

olive oil - 3 tbsp.
lemon juice - 3 tbsp.
dill - 3 tbsp. chopped
salt - 0.5 tsp.
black pepper - 0.5 tsp. mill
Method of preparation: Clean the fish from the scales and entrails, rinse well. For the marinade, mix olive oil with dill, garlic, salt, pepper and the juice of half a lemon. Rub the fish well with the marinade and leave to marinate for 1 hour. Place the washed parsley in the belly of the fish and bake on both sides until golden for about 15-20 minutes.
Whole grilled fish
Dorado or sea bass are suitable for this recipe. Instead of tarragon you can add thyme or basil.
sea bass or dorado - about 900 g
tarragon - 6-7 sprigs fresh
sea salt - to taste
black pepper - to taste
thin slices of lemon
olive oil
Method of preparation: Preheat the grill at a moderate temperature, smearing the grid with olive oil. Make 3-4 diagonal cuts on each side of the fish.
Spread with olive oil, salt and pepper to taste. In the incisions insert a sprig of tarragon and a slice of lemon, pour olive oil. Place the fish on a heated grill and bake for about 7-10 minutes on each side. Baking time depends on the thickness of the fish.
