Method of preparation: Preheat oven to 165 degrees. In a small bowl, mix the lemon juice, rum and brown sugar and set aside. Combine hot red pepper, cloves, cinnamon, ginger, black pepper, salt and thyme leaves. Grease the chicken with oil, then grease the top with the spice mixture. Put it in a pan and bake it for about 90 minutes until its juices are clear. Drizzle the chicken with its own sauce every 20 minutes while roasting. Set it aside for 10 minutes before cutting it.

Method of preparation: Heat olive oil in a small saucepan over medium-high heat until very hot. While the butter is heating, mash the cumin, salt, oregano and garlic together as a paste in a bowl. Then pour the hot oil over the spices. Allow the mixture to cool slightly. Add the lemon juice and orange juice and mix well. Place the chicken in a large resealable plastic roasting bag; the marinade is poured into it and the chicken is shaken to ensure even sticking and coating of the mixture on it. Leave it in the refrigerator for at least 4 hours or overnight. Preheat oven to 190 degrees. Place the marinated chicken in a pan. Bake it until it is no longer pink around the bones and its juices are clear - about 1 hour.

Necessary products: 1 (about 2 kg.) Whole chicken, 1 tsp butter - melted at room temperature, 1 whole head of garlic - crushed, peel of 3 lemons, peel of 1 orange, 2 tbsp chopped chives, 1 tablespoons sesame oil, 1 tablespoon finely chopped fresh thyme, 1 and 1/2 tsp salt, 1 and 1/2 tsp. ground black pepper, 1 tsp ground coriander.
