There is no Bulgarian who does not love the traditional homemade lyutenitsa. Every housewife has her own recipe for its preparation, which is passed down from generation to generation. The recipes are similar, but still differ in nature. Here we have collected the three most popular recipes to make first-class lyutenitsa this summer.
Lutenitsa with red peppers
Necessary products: 3 kg red peppers, 2 kg and a half tomatoes, 2 kg carrots, 2 tbsp. salt, 1 tsp. ground black pepper, 200 ml of oil
Method of preparation: The peppers are roasted. Peel a squash, grate it and squeeze the juice. Boil the carrots until soft. Peppers, carrots and tomatoes are ground separately and mixed. Season with black pepper and salt.
Heat the oil very lightly in a pan. Pour over the vegetable mixture. When the mixture simmers, distribute it in jars, which are boiled for 20 minutes.
Lutenitsa with aubergines
Necessary products: 2 kg of eggplant, 4 kg of tomatoes, 4 kg of red peppers, 1 kg of carrots, 120 ml of oil, half a bunch of parsley, 100 g of sugar, 4 tsp. sol
Method of preparation: Tomatoes are ground. Bake the aubergines in the oven, peel them and leave them to cool. The peppers are roasted and peeled. They are cleaned of seeds and stalks. Boil the carrots until soft. Eggplants, peppers and carrots are ground and added to tomatoes. Put on the stove. As soon as the mixture starts to bubble, add the oil.
Cook the lyutenitsa over low heat until it thickens. Add salt and sugar. Finally, add the finely chopped parsley. The result is mixed well and distributed in dry and clean jars. Sterilize for 15 minutes.
Lutenitsa with green peppers
Necessary products: 4 kg red peppers, 3 kg tomatoes, 1 kg green peppers, 200 ml oil, 2 tbsp. sol
Method of preparation: The peppers are roasted, peeled and cleaned of seeds and stalks. Roast the tomatoes. Peppers and tomatoes are finely chopped and put in hot oil. Season with salt. Fry the vegetables over low heat until thickened. The result is distributed in jars and sterilized for 30 minutes.
