The word appetizer means breakfast and comes from the Persian language. The appetizer is an integral part of the aperitif and every self-respecting Bulgarian knows that. Without an appetizer, brandy and wine do not work.

The appetizers that the Bulgarian uses are many and different compared to the season. Most often eaten Shopska salad, white brined cheese, pickles, various types of pickles. But an appetizer is not an appetizer if it is not blissful.

Every real Bulgarian loves to enjoy bacon, whether it is thinly sliced, crispy grilled or grilled or golden-fried in a pan. Next to the delicious bacon are all the other meat appetizers such as homemade sausage, blood sausage, Elena fillet, sausages, all kinds of liver and heart, deliciously prepared.

Turks also like to have a snack while drinking a crab (a national Turkish drink). The most common appetizers present at their table are: breaded mussels, pickled mackerel, tomato and cucumber salad and gadget - this is a salad similar to our milk salad. Also popular substitute specialties are vine leaves, vegetable platters and white cheese.

Greeks do not sit at the table without feta cheese, well seasoned with olive oil and oregano, served with olives. They also have a Greek version of our milk salad called Zajiki. Other famous and interesting Greek appetizers are:

- Skordalya - this is a mix of boiled potatoes, black pepper, vinegar, olive oil and garlic;

- Thyrocafteri - cheese mix, hot peppers and olive oil;

- Taramosalata - a mix of caviar, a little, onion, pieces of bread, lemon and olive oil.

Seafood is also a typical appetizer for both Greece and Cyprus. Most often fish, squid, tarama caviar, etc. are served.

Serbs most often treat themselves to different types of cheese, sausages and cream.

Italians also have appetizers called antipasta. Often these are cloths with cheese and fresh fruit, olives, fish, sausages and more.

Caprese is often served antipasta - it is sliced tomatoes and between them slices of mozzarella cheese, garnished with basil leaves and olive oil.

Bruschettas are also a very popular appetizer. This is a toasted slice of bread rubbed with garlic and then smeared with olive oil, which is sprinkled with diced tomatoes, olives and mozzarella.

Tapas is the Spanish word for appetizer. The Spaniards serve tapas mostly around lunch and dinner. In some areas of Spain, tapas is served in the form of a spike with meat, and in others - as bites. Tortilla, croquettes, sandwiches, breaded crab rolls and more are served.

The cousins like to mix with salted or marinated herring (prepared from herring), Russian borsch, pickles, marinated mushrooms, boiled potatoes, ham or bacon.

A common appetizer in the Middle East is boiled chickpeas with tahini, served with lots of lemon, olive oil and garlic. Large plates of vegetables and olives are placed on the table.
